Ingredients:
1 lb ground turkey
2 tablespoons ginger, minced
1 tablespoon garlic, minced
1 small onion, finely chopped
1 red bell pepper, sliced
1 green bell pepper, sliced
2 tablespoons Thai red curry paste
1 can (14 oz) coconut milk
1 tablespoon fish sauce
1 tablespoon soy sauce
1 tablespoon brown sugar
2 tablespoons lime juice
1/4 cup cilantro, chopped
2 tablespoons oil for cooking
Salt and pepper to taste
Directions:
In a large bowl, combine ground turkey, ginger, garlic, salt, and pepper. Mix well and form into meatballs.
Heat oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides. Remove meatballs from the skillet.
In the same skillet, add onion and bell peppers. Sauté until softened.
