Ingredients:
3/4 cup wild rice, rinsed and soaked in cold water (150g)
4 cups finely sliced mushrooms (about 300g – mix of shiitake, portobello, and cremini recommended)
1 leek, white and green parts, thinly sliced (about 4 cups or 340g)
1 large onion, diced (about 200g)
4 cloves garlic, finely chopped (about 12g)
3 tablespoons olive oil
3 tablespoons vegetable broth concentrate (Better Than Bouillon preferred)
5 cups boiling water
1 can reduced-fat coconut milk (400 ml)
1 teaspoon Herbes de Provence
2 teaspoons dried parsley
1/8 teaspoon salt
1/8 teaspoon pepper
Directions:
In a large pot, sauté the onion, garlic, and leek in 1 tablespoon of olive oil for 1 minute.
Add the mushrooms and the remaining 2 tablespoons of olive oil and sauté for about 15 minutes, or until they are well browned, stirring frequently to ensure even cooking.
Dissolve the vegetable broth concentrate in 1 cup of boiling water and pour over the vegetables.
Add the remaining boiling water, coconut milk, drained wild rice, herbs, salt, and pepper, and mix well. Cover and bring to a boil, then reduce heat to low and simmer for 30 minutes. Check that the rice is cooked (cooking time may vary by variety); if not, continue simmering, checking every 5 minutes until done.
