Mango Chicken Curry

Ingredients:

2 tablespoons vegetable oil

1 large onion, chopped

2 garlic cloves, minced

2 tablespoons curry powder

1 teaspoon ground cinnamon

1 teaspoon paprika

1/2 teaspoon ground ginger

1/2 teaspoon ground turmeric

1 pound chicken breast, cut into bite-sized pieces

1 ripe mango, peeled and diced

1 (14 ounce) can coconut milk

1/2 cup chicken broth

Salt and pepper to taste

Fresh cilantro, for garnish

Cooked rice, for serving

Directions:

Heat the vegetable oil in a large skillet over medium heat. Add the onion and garlic, and sauté until softened, about 5 minutes.

Stir in the curry powder, cinnamon, paprika, ginger, and turmeric, cooking for 1 minute until fragrant.

Add the chicken pieces to the skillet, seasoning with salt and pepper. Cook until the chicken is browned on all sides.

Mix in the diced mango, coconut milk, and chicken broth. Bring to a simmer, then reduce the heat and cook, covered, for 20 minutes, or until the chicken is cooked through and the sauce has thickened.

Serve the curry over cooked rice and garnish with fresh cilantro.
