INGREDIENTS

1½ tablespoons vegetable oil

1 red, orange, or yellow bell pepper, diced

1 small bunch scallions, light and dark green parts, sliced diagonally into 1-inch pieces

3 cloves garlic, minced

1 (14-oz) can unsweetened coconut milk (see note)

2½ tablespoons Thai red curry paste

2 tablespoons fish sauce

2½ tablespoons packed dark brown sugar

1¼ pounds chicken breast or tenderloins, thinly sliced into bite-size pieces

1 tablespoon lime juice plus lime wedges for serving (you’ll need 2 limes)

¼ cup fresh chopped cilantro

⅓ cup dry roasted peanuts, finely chopped

INSTRUCTIONS

1)Heat the oil in a large nonstick pan over medium-low heat. Add the pepper and cook, stirring frequently, until softened and starting to brown, 3 to 4 minutes. Add the scallions and cook, stirring frequently, until softened, 1 to 2 minutes. Add the garlic and cook, stirring constantly, for 30 seconds more; do not brown.

2)Add the coconut milk, curry paste, fish sauce, and sugar and whisk together. Bring to a gentle boil, then reduce the heat to a simmer and cook, uncovered, until slightly thickened, about 2 minutes. Add the chicken and simmer, uncovered, stirring occasionally to promote even cooking, until the chicken is cooked through, 5 to 8 minutes. (Do not let the sauce vigorously boil; the idea is to cook the chicken gently so that it’s tender.) Stir in the lime juice, cilantro, and peanuts. Taste and adjust seasoning with more lime, if necessary. Serve with jasmine rice.

Note:

The consistency of canned coconut varies by brand. Some might be a bit watery, while others might separate in sauces. I’ve consistently had great results with the Thai Kitchen brand.

4 cloves Garlic, minced

2 lbs Ground chicken

1/4 cup Red onion, finely chopped

1/4 cup Fresh dill, chopped

1/2 tsp Ground cumin

1/4 cup Fresh mint, chopped

1/2 tsp Lemon zest

1/2 tsp Ground oregano

1/2 tsp Red pepper flakes

1 tsp Salt

1/4 tsp Black pepper

1 tbsp Olive oil (for cooking)

For Serving:

1 Cucumber, sliced

1 Tomato, diced

Tzatziki sauce

Cooked white rice

Romaine lettuce leaves

Crumbled feta cheese

Instructions:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

In a large mixing bowl, combine the ground chicken, minced garlic, chopped red onion, chopped dill, chopped mint, lemon zest, ground oregano, ground cumin, red pepper flakes, salt, and black pepper. Mix until all ingredients are evenly incorporated.

Using your hands, shape the chicken mixture into meatballs of your desired size. Place them on the prepared baking sheet.

Drizzle the olive oil over the meatballs to help them brown in the oven.

Bake the chicken meatballs in the preheated oven for about 20-25 minutes, or until they are cooked through and golden brown on the outside.

While the meatballs are baking, prepare the serving components. Cook the white rice according to package instructions. Slice the cucumber, dice the tomato, and wash the romaine lettuce leaves.

Once the meatballs are done, remove them from the oven and let them cool slightly.

To serve, arrange the cooked white rice on a serving platter or individual plates. Place the baked chicken meatballs on top of the rice.

2. Meanwhile, whisk together the eggs, parmesan, garlic, basil, thyme, and chives, in a large serving bowl.

3. Bring a large pot of salted water to a boil. Boil the orzo until al dente. Before draining, scoop out about 1 cup pasta water, then drain.

4. Immediately add the hot orzo to the egg/cheese mixture, tossing quickly (to ensure the eggs do not scramble) until the eggs thicken and create a sauce. Thin the sauce with a bit of the reserved pasta water, until it reaches your desired consistency. Add the butter and spinach and gently toss to combine. Season with salt and pepper.

5. Divide the orzo among plates and top with freshly torn burrata cheese, the crispy prosciutto, and fresh herbs. Drizzle a bit of olive oil over top. Enjoy!

1/4 cup diced shallots

2 tbsp extra virgin olive oil

1/2 cup diced yellow onion

3 grated or pressed cloves of garlic

1 1/2 cups sliced baby bella mushrooms

5 Tbsp butter

1 1/2 cups wild mushrooms or another mushroom mix

6 sprigs fresh thyme divided

1/4 cup flour

1/2 cup salty pasta water

1/2 tsp sea salt

3/4 cup white wine

1/2 cup broth (chicken or vegetable)

1/4 tsp fresh cracked pepper

INSTRUCTIONS

Add a large pot of water to the stove and add 1/2 tsp sea salt. When boiling add the Pappardelle and cook according to package directions.

Add extra virgin olive oil to a heated saute pan over medium heat. When it shimmers, add the onions and shallots. Cook for 4 minutes until they begin to soften.

Add the garlic and the baby bella mushrooms and cook for about 2 minutes.

Then add the butter and stir continuously until it melts. Then add the rest of the mushroom mix and half of the thyme sprigs. Cook for 3-5 minutes. The mushrooms will start to take on a caramelization brown color and soften up nicely.

Add the flour in and mix well. Cook for about 1 minute and then add the white wine and scrape the brown bits on the bottom of the pan.

Let the mix simmer for about 2 minutes and let some of the white wine cook off. Then then add the broth and simmer for 3-5 minutes.

Add the salty pasta water and mix well. Turn off the heat and add the pappardelle.

Serve with additional salt and pepper to taste and more fresh thyme leaves.
