Ingredients:

1 lb ground chicken
1 egg
1/2 cup breadcrumbs
2 tablespoons Thai red curry paste
1 tablespoon fish sauce
1 teaspoon ginger, grated
2 cloves garlic, minced
1/4 cup cilantro, chopped
1 tablespoon coconut oil
1 can (14 oz) coconut milk
1 red bell pepper, sliced
1/2 cup peas
Salt and pepper to taste

Directions:

In a large bowl, combine ground chicken, egg, breadcrumbs, Thai red curry paste, fish sauce, ginger, garlic, cilantro, salt, and pepper. Mix well.
Form the mixture into meatballs, about 1 inch in diameter.
